A south of the border take on a classic italian meal.
Ingredients:
1 Pound Ground Sirloin or Beef
3 Cans Pinto Beans, drained
1/2 C. Sour Cream
2 Cans Enchilada Sauce
3 Green Onions, chopped
1/2 Package Taco Seasoning
Flour Tortillas
1 Package Spanish Rice (I recommend Uncle Ben's 90 second microwave brand)
2 C. Shredded Cheddar or Mexican Cheese
Cooking Instructions:
Preheat oven to 350 degrees. Cook ground sirloin or beef with green onions until browned. Reduce heat to low, and add sour cream, rice, pinto beans, and 1/4 C. shredded cheese. Cook on low 5 minutes. Meanwhile, place one layer of tortilla shells in greased casserole dish. The number of tprtillas used for each layer will depend on the size of the dish you use. Place a layer of meat and bean mixture on top of tortillas, and sprinkle with cheddar cheese. Repeat layers in this manner, until all ingredients are used. End with tortillas on the top layer. Pour enchilada sauce over the top, and sprinkle with additional shredded cheese if you would prefer. Bake for 20 minutes, or until heated through.
