A very versatile quesadilla recipe that is sure to please a hungry crowd!
Ingredients:
3 Large boneless skinless chicken breasts
1 can black beans
1 jar of salsa
1 C. Sour Cream
2 C. Shredded Cheese (cheddar, monterey jack, or your favorite)
5 pieces crumbled bacon
1 clove garlic
1/2 tsp. onion powder (more or less to taste)
1/2 tsp. Cinnamon (more or less to taste)
Tortilla shells
Quesadilla Maker, can also be made in large skillet
Cooking Instructions:
Turn on Quesadilla maker. Boil chicken breasts with garlic and onion powder until cooked through. Transfer cooked chicken to plate and cut into strips. In large skillet, add black beans, salsa, crumbled bacon, cinnamon, and cooked chicken. Heat until bubbly.
Meanwhile, add spoonful of sour cream, and shredded cheese in center of a few tortillas. When chicken mixture is heated, add large spoonful on top of sour cream chicken mixture. Place another tortilla shell on top of each prepared tortilla, and place one assembled quesadilla in quesadilla maker, or lightly greased, heated large skillet. If using quesadilla maker, follow manufacturer instructions to heat your quesadilla. If using a skillet, place a heavy ceramic plate on top of quesadilla to weight it down. Flip quesadilla over when it is lightly browned, and toast both sides. When quesadillas are finished, remove from heat source, and cut into triangular sections.
Serve with salsa and sour cream.
This is a recipe I made up in the kitchen one afternoon. It is very versatile, and can easily be changed to suit any preference. Try using steak instead of chicken, or adding jalapenos or pepper sauce to increase the heat. I used mild salsa, but you can use your heat preference, and try one of the hundreds of different flavors available to make them truly unique.
